Roast Turkey With Thai Peanut Sauce (Gtc)

1 turkey (about 10 lbs)
2 lemons
1 garlic salt to taste
1 black pepper to taste
1/4 cup butter, melted
12 carrots, cut into pieces
2 onions, sliced
1 recipe thai peanut sauce
1 (gtc)

Preheat oven to 400øF. Pierce rinds of lemons and place insidce turkey cavity. Truss bird. Sprinkle with garlic salt and pepper; place on rack in roasting pan. Reduce oven to 325øF; place turkey in oven. Baste with melted butter throughout cooking. If skin gets to dark, cover lightly with foil tent. Cook turkey for 15-20 minutes per pound or until thermometer inserted into breast measures 175øF. Put carrots and onions around turkey during last 30 minutes of cooking; stir occasionally. Slice turkey. Serve with carrots, onions, and Thai Peanut Sauce (GTC).
