Cindy's Chicken Chow Mein
chicken, chinese, low-cal, pasta
1 to 1 1/2 lbs. boneless
1 skinless chicken breasts
1 small can chun king chow mein
1 vegetables
2 green onions (tops only
1 chopped finely)
1/4 cup shredded carrot
4 to 8 oz. fresh or canned
1 mushrooms (opt.)
1 small stalk of celery (chopped
1 fine and thin)
1 small can bamboo shoots
1 small can water chestnuts
1 can chicken broth
1/2 teaspoon to 3/4 tsp. salt
1/4 teaspoon pepper
1 soy sauce
1 teaspoon garlic powder
In a wok or large pan. Pour your chicken broth. Add your vegetables and let simmer. Thicken your broth by mixing cold water and corn starch to make a medium consistancy sauce. In a separate skillet, preferrably a non-stick pan. Cook your chicken, that is cut into strips. Just lightly brown it. Add salt, pepper, and garlic powder to the chicken. Then add your chicken to your vegetables. Let simmer 5 to 10 min. Serve over rice or noodles for Chicken Lo-Mein. Top with Chow Mein Noodles, and soy sauce to taste.
This is quick and easy, and I don't think it is very fattening either, it has lots of veggies. I guess if you wanted to you could use green cabbage or chinese cabbage in it as well. The veggies in this I think you could change around some if you want to get imaginary. You could use broccoli in it as well. I guess it all depends on the type of veggies, that you like best.
