Oriental Rice Salad (Aha)

3 cup cooked rice
10 oz package frozen no-salt-added
1 green peas, defrosted
4 scallions, sliced
1 1/2 lb diced, cooked chicken
1 stalk celery, diced
2 tablespoon diced green bell pepper
2 tablespoon sherry
1 tablespoon light soy sauce
1/4 teaspoon hot pepper oil
1/8 teaspoon ground ginger
4 tablespoon rice vinegar
2 tablespoon acceptable vegetable oil
1 tablespoon dijon mustard

In a large bowl, combine rice, peas, scallions, chicken, celery, and bell pepper. Mix well. In a jar with a tight-fitting lid, combine remaining ingredients. Shake well. Pour liquid over rice mixture. Mix well. Spoon rice mixture into a ring or serving bowl and cover. Refrigerate for at least 1/2 hour.
