2 teaspoon minced garlic
1 1/2 tablespoon minced peeled ginger
1 teaspoon serrano chile; seeded minced
2 tablespoon fermented black beans; rinsed
1 tablespoon dry sherry
1 tablespoon oyster sauce
3/4 cup defatted chicken stock
1 teaspoon sugar; or to taste
1 teaspoon cornstarch diluted in 2 tablespoons; water
1 tablespoon finely chopped cilantro -garnish--
