Apple & Pork Curry

2 tablespoon oil, olive
4 boneless pork chops, trimmed
1 small onion, sliced thin
1 clove of garlic, minced
1 tart cooking apple
1 small sweet red pepper
1/2 cup chicken stock
1 teaspoon cornstarch
1 teaspoon curry powder
1/2 teaspoon ground cumin
1/2 teaspoon cinnamon
1 salt
1 freshly ground black pepper
1 chopped parsley or coriander
* The cooking apple should be peeled and sliced, the pepper should be cut into thin strips.
