Szechuan Beef With Orange Sauce

1 lb round steak
2 tablespoon soy sauce
2 tablespoon dry sherry
2 tablespoon hoisin sauce
3 tablespoon peanut or vegetable oil
1 tablespoon cornstarch
1 skin of one orange, orange part onl; y, sliced
3 garlic lcoves, crushed
2 slice ginger-root, quarter sized
3 hot red peppers, dried
2 chinese black mushrooms sliced
Combine 1 Tbsp each of soy, sherry, hoisin sauce, oil and cornstarch. Slice beef across grain into thin slices. Pour sauce over beef slices and marinate 30 minutes or longer. Combine remaining soy, sherryand hoisin sauce and set aside. Heat wok or heavy skillet. Add remaining 2 Tbsp oil. Add orange rind, garlic, ginger root, hot peppers and mushrooms. Stir fry about 1 minute until very fragrant. Add bef and stir-fry until beef is cooked through, about 1-2 minutes. Add soy sauce mixture, stir-fry 30 seconds longer. Serve with rice.
