Vegetable Fried Rice

chinese, easy, vegetarian

1 1/2 cup quick cooking brown rice
2 tablespoon peanut or veg. oil
1 small yellow onion
1 small red, yellow or green bell
1 pepper
1 teaspoon bottled minced garlic
1/4 teaspoon dried hot red pepper flakes
1 as desired
3 green onions with tops
3 tablespoon soy sauce
1 cup frozen baby peas
2 teaspoon oriental sesame oil
1/4 cup roasted peanuts for garnish

Cook rice according to package directions, omitting salt. While rice is cooking, heat oil in a large skillet or wok over medium heat. Coarsely chop onion and add to skillet. Coarsely chop bell pepper and add to skillet. Add garlic and pepper flakes. Cook vegetables 3 minutes stirring occasionally. Thinly slice green onion. Increase heat to medium high and stir in hot cooked rice, green onions and soy sauce. Stir fry for one minute. Add peas and stir fry for one minute. Remove from heat. Add sesame oil and mix well.
