Canola Greens (Yu Choye) With Oyster Sauce, Rosa Lo San R

1 lb yau choy
2 teaspoon oil
1 slice ginger; size of a quarter
1/4 cup low-salt chicken broth; or
1 veg broth; or water
1 ; salt
1 pinch sugar
2 tablespoon oyster sauce
2 teaspoon sesame oil (brown kind)
Trim leaves from stems and cut both into bite-size pieces; keep separate.
Frizzle ginger in oil; discard ginger. Add stems and stir-fry 1 min; add leaves and stir-fry 30 sec. Add broth and cook covered 2-3 min. Uncover. Season with salt and sugar. Test a stem; if it is not tender, then cook some more. When stems are tender, remove from heat. Stir in oyster sauce. Turn out on a platter. Sprinkle with sesame oil and serve.
