Martin Yan's Plum Sauce

1/2 cup crushed pineapple
1/3 cup mashed, seeded chinese salted plums
1/4 cup pineapple juice
1/4 cup brown sugar
3 tablespoon cider vinegar
3 tablespoon apricot preserves
2 garlic cloves, minced
1 teaspoon crushed or ground hot pepper (optio; nal)

Blend in blender or food processor until smoothly combined. Pour into saucepan and simmer 5 min.

Yield: 1 batch
