Fried Bean Cakes

1 cup red bean paste (substitute
1 other sweet paste)
3 cup flour
2 teaspoon baking powder
8 tablespoon sugar
1/2 cup water
1 tablespoon lard or shortening
1/2 teaspoon salt
3 tablespoon evaporated milk (substitute
1 milk or water)
1 oil for frying

Divide paste into portions. Sift flour and baking powder. Mix with all of the rest of the ingredients; knead to a smooth dough. Cut into 16 portions. Flatten each portion into a 2" circle. Let circles rest for 10 min under a damp cloth. Put 1/2 oz paste in each, wrap up, seal the seam with your fingers, and form into a ball. Flatten each ball slightly. When all are done, deep-fry at low heat for 6 min. Drain and serve. From: Michael Loo
