Sweet & Sour Sauce

1/2 cup carrot, sliced
1/2 cup green pepper, coarsely
1 chopped
3/4 cup sugar
1/2 cup ketchup
1 tablespoon soy sauce
1/4 teaspoon salt
15 1/4 oz pineapple chunks, undrained
3 1/2 tablespoon cornstarch
1/3 cup water
1/2 cup white vinegar
Cook carrot in a small amount of boiling water 2 minutes. Add green pepper; cook 1 minute. Drain; rinse with cold water. Drain; set aside. Combine sugar and next 3 ingredients in a medium saucepan; stir well. Drain pineapple, reserving juice; stir pineapple juice into sugar mixture. Bring to a boil. Combine cornstarch and water, stirring until smooth; add cornstarch mixture and vinegar to juice mixture. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Stir in vegetables and pineapple chunks.
