Sesame Soy Chicken (Aha)

1 cup finely chopped onion
1/2 cup fresh line juice
1 teaspoon grated lime rind
1/4 cup light soy sauce
1/3 cup sherry
2 tablespoon grated fresh ginger
1/4 cup orange juice concentrate
1 tablespoon sugar
3 cloves garlic, minced
1 tablespoon hot pepper oil
6 chicken legs and 6 chicken
1 thighs (approximately 3 lbs

1 skinned, all visible fat
1 removed
1 tablespoon sesame seeds, toasted

In a bowl combine onion, lime juice, rind, soy sauce, sherry, ginger, orange juice concentrate, sugar, garlic, and oil. Set aside. Rinse chicken pieces and pat dry. Arrange in a blaking dish and pour lime juice mixture over all, turning each piece to coat completely. Cover with plastic wrap and refrigerate several hours or overnight, turning chicken pieces twice during that time. Preheat oven to 400 F. Bake chicken with marinade 35 minutes, or until done. Then broil 5 minutes, turning pieces in cooking juices to maximize flavor. Sprinkle with sesame seeds before serving. GRILLING METHOD: Grill over hot charcoal 30 minutes, or until done. Bring marinade to a boil over medium-high heat. Baste chicken with hot marinade several times while grilling.
