Almond Cookies (Hsin Jen Ping)

1 1/2 cup flour
1/2 teaspoon baking powder
1/2 cup sesame seed oil
1/4 cup ground almonds
1/2 teaspoon almond extract
1 pinch of salt
3/4 cup sugar
1 egg
20 whole blanched almonds

Sift the flour and baking powder in a mixing bowl. Slowly add the oil and mix well. Add the ground almonds, almond extract, sugar, salt and whole egg and stir thoroughly. This should be a stiff dough, but if it is too stiff to work with, add a drop of water at a time until the dough is pliable. Form into small balls and press into cookies 1/2 inch thick and about 2 1/2 inches in diameter. PLace an almond in the center of each cookie. Place on lightly greased cookie sheet and bake at 350 degrees in a preheated oven for abut 15 minutes or until they are light brown in color. Cool and serve.

Yield: 20 cookies
