Tips

1. Fry garlic and ginger over low heat to prevent overcooking.
2. After adding sugar, use extreme low heat or use remaining heat to fry sugar. Because sugar is easy to be cooked and burnt.
3. Spicy and fresh red chili is the key to this dish. Do not steam red chili over 10 minutes, otherwise, it is too soft and less fresh.
