Garlic Aroma Chili Sauce Recipe
To make a strong garlic aroma with a bright chili taste, we cooked garlic and red chili separately before mixing. We steamed red chili to ensure its fresh and bright, spicy taste. Then sauteed garlic, ginger, and seasoning with scallion sauce and sugar. After mixing them together, we smelled a strong fried garlic aroma with a light, bright, in-depth spicy chili flavor.

Tips
1. Fry
garlic and ginger over low heat to prevent overcooking.
2. After adding
sugar, use extreme low heat or use remaining heat to fry
sugar. Because sugar is easy to be cooked and burnt.
3. Spicy and fresh red chili is the key to this dish. Do not steam red chili over 10 minutes, otherwise, it is too soft and less fresh.

5 minutes | Wash red pepper and remove the stem. Peel garlic and mince into pieces. Wash ginger and cut into small pieces. |

5 minutes | Add 1 tablespoon oil in a wok. Fry minced garlic, ginger over low heat until fragrant. Add scallion sauce and fry until smell aroma. Then season with soy sauce and sugar. Mix well. |
