1. Do not add too much water. Only add water until cover the pears. During the stewing, if the amount of water is decreasing, then add water ASAP.
2. Do not overcook, or the mouthfeel is bad-too soft, like a paste.
3. During stewing, you can add ginger slices or a few Sichuan peppercorns base on personal preference.
4. Use a pressure cooker can save a lot of time for this dessert.
