Red Dates Flavour Pear (ReDongGuo) is a traditional street snack in Gansu province, China. It is one of the best dietary therapy for addressing cough and lung issues. Its natural sweet will not be boring but only provide a comfortable finishing touch.

1 tangerine peel
1. Do not add too much water
. Only add water until cover the pears. During the stewing, if the amount of water is decreasing, then add water ASAP.
2. Do not overcook, or the mouthfeel is bad-too soft, like a paste.
3. During stewing, you can add ginger slices or a few Sichuan peppercorns base on personal preference.
4. Use a pressure cooker can save a lot of time for this dessert.
Wash red dates and soak in water for 30 minutes.
Wash pears. Add pears and tangerine peel into a pot. Add water until cover the pears. Bring to a boil.
Cook until pear’s color changed. Add rock sugar and continue to stew over medium heat for 30 minutes.
Add red dates to the pot, switch to low heat to stew until pears are soft. Serve.
