How to buy abalones?

When buying fresh abalones, choose fresh and alive abalones. The best abalone should have no bad smell. And it is round, thick and in a dark color.

Do not purchase the abalones in white or clear color. These kinds of abalones are raised in fresh water. They are less expensive and has less seafood flavor than the one raised in the sea.

Soak the abalone in water for 30 minutes. Then use a toothbrush to scrub all parts of abalone, including its shell. You can scrub with a little salt, that makes abalone cleaner.

Blanch abalone in the boiling water for a maximum of 2 minutes. Then remove from hot ASAP. 

If it is fresh and alive abalone, cook directly after washing. Do not separate its meat and shell. Otherwise, its meat will be tough and less juicy.
