Tips:

  1. It is difficult to scrape hairtail fish’s scales. You can put it 80 ℃ hot water first. After that, put into cold water immediately. Then you can easily scrape and remove the fish scale with a brush,
  2. Hairtail is a sea fish, so it is salty. No need to add extra salt when cooking. if you like strong taste, you can dip in salt pepper (or seasoned pepper) to eat.

Remove head, visceral, and fin edge of hairtail. Scrape fish scale. Wash and cut into 6 cm strips. Wipe with cooking wine and salt. Marinade for 15 minutes. Coat with cornstarch. Set aside.

Add oil and preheat the wok. Fry Sichuan pepper until dark brown. Remove from heat and let it cool. Press fried Sichuan pepper into powder, then mix with white pepper and salt.  Put it in a small dish. And set aside.

Add oil and preheat the pot. Add hairtail fish strips and fry until golden brown. Remove from heat and drain oil.

Sprinkle the coriander on the hairtail fish. Serve with pepper salt (Made in Step2).
