5 longan
1 Codonopsis pilosula (Dangshen)
3 pieces Female ginseng (Danggui)
10 red dates
1 tablespoon goji
1/2 silkie chicken
8 bowls water
Side dish
1 potatoes
1 sweet potatos
1 corn
2 lotus root
4 rape flowers
1 piece tofu
4 shiitake mushrooms
fishballs
fish tofu
Seasoning
1 tablespoon cooking wine
3 teaspoon salt
2 teaspoon sugar

Herbal Cuisine Silkie Chicken Hot Pot Base

This silkie chicken soup has a strong herbal aroma without any bitter taste. To maximum improve the supplement feature of herbal, we optioned to the silkie which is believed the best Chinese supplement of meat. The process is simple - after blanching silkie chicken, simmering all ingredients in a stew pot. The soup is light with a comfortable taste. A simple dipping sauce fortifies the silkie chicken taste to the next level.

Tips

1. When serving, drink soup before cooking other ingredients. Otherwise, you will miss an authentic herbal taste chicken soup.

2. Since the soup taste is not very depth and strong, use a dipping sauce when having other hot pot ingredients, such as meatball, thinly sliced lamb and beef.

3. Wash herbal ingredients thoroughly, because they may have a lot of mud and sand.

Wash scallions and ginger and cut into slices.

Remove the shell of longans.  Cut Codonopsis pilosula (Dangshen) into small strips. Wash angelica, red dates, Goji and set aside.

Peel potatoes and sweet potatoes, cut into slices. Cut corn into 4cm long strips and set aside.

Peel lotus root, cut it into slices than soak in water. Remove roots of rape flower, rinse and clean. Set aside.

Soak tofu in brine for 30 minutes. Cut into thick slices. Remove pedicle of fresh shiitake mushroom. Wash fishball and fish tofu. Set aside.

Wash silkie chicken. Remove the chicken butt. Put into a skillet with cold water. Bring to a boil. Skim floating foam. Remove from heat and drain. Set aside.

Put branched silkie chicken into a stew pot.  Add water, cooking wine, and the rest of the ingredients.

Simmer for 1.5 hours, adding salt and sugar to taste.
