Chinese Blanched Chicken Recipe
Chinese Blanched Chicken, also known as boiled chicken, is one of the Cantonese chicken dishes. It is the most difficult and easy Chinese chicken. It is simple because Its ingredients are simple ingredients-chicken- seasoning with salt and ginger. On the other hand, it is the most difficult because of its cooking time. Heat, cooking time and the size of chicken all result in overcooked or under-cooked. The blanched chicken should tender with tight skin.

Tips
- The specific time for immersing chicken depends on the size of the chicken fat or thin, cookers and the fire. Usually, immersing time is between 15 minutes to 25 minutes.
- To see whether the chicken is cooked, you can press the chicken legs. If the leg muscle is firm, it means the chicken is cooked. After cooking, the successful blanched chicken has blood in bones only, and no blood at meat or skin
- Using chicken soup or pork bone soup to boil chicken can enhance chicken meat flavor. For chicken soup, you can simply add chicken powder and water. For pork bone soup, you need to boil pork one with ginger slices for 1 or 2 hours to achieve the best taste.

Steps
5 minutes | Wash and clean the chicken. Cut ginger into slices. |
5 minutes | Add water and slice to a skillet. Bring to a boil. Then boil the chicken. Make sure water can cover the whole chicken. |
5 minutes | Shake the chicken to let it evenly heated. Boil until chicken skin tight and change color. Remove from heat and drain water to make sure temperature of chicken cavity and skin is the same. |

15 minutes | Use low heat to boil until chicken is cooked. Turn off the heat and immerse for 15 minutes. |
10 minutes | Remove chicken from hot water. Put it in ice water immediately, for 10 minutes. |
5 minutes | Mix minced ginger and chopped the green onion. Put it in a small bowl. Pour over a little hot oil and mix well to make a ginger sauce. |
5 minutes | Slice chicken and serve with ginger sauce. |
