Tips
- When frying eggs, pour in the cooking wine to add flavor. The key point to make a tender fried egg is to preheat the wok then add cold oil.
- Replace chicken powder and monosodium glutamate with sugar to improve flavor.

Wash leek and cut into sections. Beat the eggs in a bowl and stir evenly. Add cooking wine, continue to stir evenly. |

Preheat the wok. Add cold oil. Pour in the egg mixture and saute until set. Set aside. |

Add cold oil to the remaining oil. Add leeks and fry over high heat, seasoning with salt, sugar, and soy sauce. Stir-fry for 20 seconds. Then add the egg, stir-fry 5 seconds. Remove immediately and serve. |
