Fried Eggs With Chives

Tips

  1. When frying eggs, pour in the cooking wine to add flavor. The key point to make a tender fried egg is to preheat the wok then add cold oil.

Wash leek and cut into sections. Beat the eggs in a bowl and stir evenly. Add cooking wine, continue to stir evenly.

Preheat the wok. Add cold oil. Pour in the egg mixture and saute until set. Set aside.

Add cold oil to the remaining oil. Add leeks and fry over high heat, seasoning with salt, sugar, and soy sauce. Stir-fry for 20 seconds. Then add the egg, stir-fry 5 seconds. Remove immediately and serve.
