Stewed Chicken Feet with Cowpea and Peanut is Cantonese cuisine. After stewing, you can smile authentic soup aromatic even without removing the lids. Besides the taste, it is a beauty formula for skins. Chicken feet are rich in collagen which will be dissolved during stewing cooking. More importantly, the soup contains less fat and help to control calories intake. It is a top healthy soup among Chinese cuisine.

Tips:

1. Stewing over high heat can speed up the cooking process and make chicken feet softer. The softer chicken feet, the more nutrition of the soup, because its collagen dissolves in the soup.
2. In Step5, you can blanch chicken feet longer to remove the dirty stuff.
3. No need to add too much salt. The authentic taste of the soup is light and fresh. You can smell a peanut and cowpea aromatic after stewing.

Wash pork ribs, chop into pieces. Blanch them in boiling water. Remove and drain.

Wash cowpea, soak them in clean water for 1 hour; Soak peanuts until soft, then peel off the peanut coat.

Add water to the pot and bring to a boil. Add cowpea and peanut and boil for 5 minutes. Remove from hot water and drain.

Wash chicken feet, peel off the yellow (tough) skin. Cut off the tip. Add a little salt, cooking wine and mix well.

Preheat the pot, add water to cook chicken feet for 5 minutes. Skim off floating foam.

Add cooking wine, green onions, and ginger slices to cook for 25 minutes. Remove ribs, green onions, and ginger slices.

Add peanuts and cowpea to cook over medium heat, for 15 minutes until chicken feet. Cook until chicken feet and cowpea is soft.

Season with salt, chicken powder, and sugar. Pour into a large bowl to serve.
