When soaking white fungus into the water, change the water occasionally. After washing white fungus, soak for another  1~3 hours for better mouthfeel. Then do not discard this water, use this water for stewing to have a more favorable juice.

Soak white fungus into warm water until soft. Wash and clean. Cut into small pieces.

Wash pawpaw, peel and remove seeds. Cut into small pieces and set aside.

Put white fungus and pawpaw into a stewpot. Add rock sugar based on personal preference. Bring to a boil, then switch to small fire to stew for 50 minutes. Enjoy!
