Soak dried shiitake mushroom into the water until soft. Wash and cut into pieces.
Remove seed from the green, red, yellow pepper. Wash and cut into pieces.
Mix wheat flour and four. Add some water to the flour mixture and make it to a dough. Let it stand for 30 minutes.
Use a rolling pin to roll dough into thick flat. Then cut into long noodles. Use hands to separate noodles into small pieces and coat it with flour. Use thumb press the dough from a corner to front. Then the flat noodle is ready.
Add water in the pot, bring to a boil. Blanch flat noodle until cooked. Remove noodles from pot and rinse with cold water. Drain and set aside.
Preheat the wok. Add oil to fry minced ginger. Add shiitake mushroom to stir-fry until aromatic. Add green pepper, red pepper, and yellow pepper to the pot. Season with soy sauce, five-spice powder, chicken powder. Mix well and stir-fry until all ingredients are cooked.
Add flat noodles into the pot and continue to stir-fry for 3 minutes.
