Wash pig trotter. Then, fill the pot with cold water, put pig trotter into the cold water pot, boil for a few minutes to remove blood. Take out pig trotter and rinse it with warm water. Drain and set aside.
Rinse scallions, ginger, and garlic. Set aside.
Wash star anise, bay leaf, cinnamon, dried chili pepper, Chinese prickly ash, set aside.
Add oil to the pot. Add onion, ginger, and garlic, stir-fry until fragrant;
Then add star anise, bay leaf, cinnamon, dried pepper, Chinese prickly ash. Stir-fry until fragrant;
Remove spices and set aside. Do not remove the oil from the pot.
Put a small amount of rock sugar into the pot (do not need to add oil, just use the oil left in the pot). Boil with small heat until all rock sugar dissolved;
Put the pork trotter in the pot. And stir fry until evenly colored
Add cooking wine, light soy sauce, dark soy sauce, and stir-fry evenly;
Add the seasoning and stir-fry.
Add hot water until water cover pork trotter. Bring to a boil. Cover the pot and simmer for 70-80 minutes.
After 70-80 minutes, you can try the taste to see whether salty enough. If not, add soy sauce (do not add salt). Boil until the soup become thicken.
Remove from heat. And enjoy your tasty pork trotter.
