Eggplant can soak a lot of oil. Make sure you add enough oil to fry eggplant (adding enough oil is the best way to make this dish delicious). However, if you don’t want too much oil intake, you can microwave for 4 minutes. It can prevent aborbing too much oil, but it might have some impact on the taste
Cut the eggplant into strips. And fry in the pan (microwave oven for 4 minutes to prevent absorbing too much oil).
In a small bowl, add onion, ginger and half of the garlic (separate the minced garlic into two parts). Add 1 tablespoon soy sauce, 1 tablespoon vinegar, 2 tablespoons sugar, a little salt, a little pepper, a little light soy sauce, and cornstarch.
Add oil and stir fry sliced onion, minced ginger and garlic, fry until fragrant. Add eggplant. Pour in the sauce. Sprinkle with the rest of the minced garlic. Enjoy the tasty dish.
