Tips

1. You can blanch catfish in boiling water until medium well before stewing. In this way, the soup has no fishy smell. Or you can add 2-3 ginger slices for stewing to remove the fish smell.

2. The key to the best taste is dried tangerine peel. It boosts the taste by adding a little sweet and sour tangerine aroma.

Remove catfish’s scale and organs.  Rub catfish with salt insider and outside, marinade for 20 minutes, then rinse and clean. Rinse and clean lean pork.

Add water to a stew pot. Bring to a boil. Add all ingredients into the pot and stew over a low fire. Stew for 2 hours. Add salt for seasoning.  Serve.
