Cucumber with Pork Tenderloin Soup Recipe
The soup combines cucumber and pork tenderloin to offer a balance of meat and vegetables. Drinking the soup can make us a light comfortable feeling. It is a perfect daily soup in summer.
500g pork tenderloin
50g red bean
50g green bean
1. Use old cucumber for this dish Because old cucumber is tougher and can make people more refreshed. When cucumber becomes old, its skin will be yellow instead of green.
2. You can use pork bone as the main ingredient for the soup as well.
Use an old cucumber, remove seed and cut into pieces. Soak red bean and green bean into the water for half day in advance.
Wash and clean pork tenderloin, cut into large pieces. Blanch into boiling water until medium-well.
Add water to a pot. Add all ingredients and then simmer over low heat to simmer for 3 hours. Add salt for seasoning. Serve.
