1. Make sure fry meat paste until excess water run out. These kinds of meat paste are the most aromatic.
2. Use soup stock, such as pork bone soup, to cook the noodle to have a better meaty flavor.

Preheat the pot, add lard to and cook until hot. Add diced streaky pork to fry until oil comes out and color changed. Add scallion slices, minced ginger, broad bean paste into the pot. Fry over a small fire until cooked. Add bean sprout fry until aromatic. Then, the meat paste is ready. Remove from heat and set aside. |
