Old Peking Pancake Recipe
For this Old Peking Pizza recipe, you do not need professional pot. You can make the old Peking flavor food with the simplest home cooking materials!
1 (medium size) Zucchini
150 g flour
1 teaspoon salt
1 teaspoon sesame oil
- Cut zucchini into thin strips. Do not cut too small pieces, otherwise, the taste would be bad.
- You can add more zucchini, eggs or flour if you desire.
- The original recipe use vinegar and minced garlic. You can add red oil, Lao gan ma Chili paste and other sauce.
- Fry with low heat. Do not fry too long to make sure the tender taste.
Wash zucchini (do not remove the skin). Cut into thin strips. (Note: do not cut into small piece, or it won’t be tender).
Add a teaspoon of salt and stir well with chopsticks.
Set aside for about 15 minutes. A lot of water will come out from zucchini. Pour out the water.
Beat in two eggs in the bowl and mix well.
Add flour, stir well and set aside for 20 minutes until can not see flour on the batter.
Add a teaspoon sesame oil into the pan and stir well.
Add a little oil to the pan. Wipe pan with the oil. Preheat the pan, then add the batter, flatten, fry over low heat.
Gently shake the pan until the batter is golden brown. And turn over the batter. Fry until both sides are golden brown.
Add vinegar and minced garlic into another small bowl and serve as a sauce.
