Tips

1. For better health effects, simmer with wax gourd seed. But for the best taste, remove wax gourd seed before simmering.

2. Do not add too much peanut oil to fry fish fillet, in this way, you can directly add water to the pot without moving fish fillet to another stew pot. The fried oil can bring more fish aroma to the soup.

Wash and peel wax gourd. Cut into small cubes. Soak red beans into the water for 1 hour in advance. Wash and clean red dates.

Wash and clean fish. Add peanut oil and ginger slices into a frying pan. Fry fish fillet until golden brown on both sides.

Add all ingredients into a pot. Add water and bring to a boil. Use low heat to stew for 3 hours. Add salt for seasoning before serving.
