Aromatic Pork Bone Soup Hot Pot Base Recipe

Pork Bone Hot Pot Base is a foundation of all Chinese hot pot. It is fast and aromatic with the least ingredients. We can add it to almost every hot pot when the soup is not enough. To get a perfect aroma, we have simmered all ingredients for 3 hours. And decorate its taste and appearance with Goji.

Tips

1. Blanch pork bone before simmering. It can remove bad taste and make soup aromatic.

2. After blanching, rinse with cold water enables pork bone diffuse taste in the soup later.

3. Add more water for simmering. Simmering 3 hours lead to soup loss, add more water to make sure you have enough soup for the hot pot.

Remove roots, wash scallion. Then cut scallion into strips. Peel ginger and garlic. Wash and cut into slices.

Wash and cut pork bones into strips. Set aside.

Add water in the pot, add the pork bones. Bring to a boil. Blanch for 10 minutes to remove blood taste.

Rinse blanched pork bones with cold water to remove blood and foam.

Add water to the skillet. Bring to a boil. Add scallion strips, ginger slice, garlic slice, and pork bone strips.

When the soup boil again, cover and simmer on low heat for 3 hours.

When the soup is done, uncover and skim foam. Sprinkle Goji on the soup. Serve as Pork Bone Hot Pot Base.
