Chinese Hairy Tofu Recipe
Hairy Tofu is a well-known snack in the Aihui province. You may be worried about whether it is rotten. But eventually, the taste can prove that it is edible and yummy. The fungal spore creates a special mouthfeel that satisfies your taste bud. Be brave to try hairy tofu, you will be glad you did.
1. Do not overcook hairy tofu, otherwise, it will affect the taste and appearance.
2. You can buy hairy tofu from Asian markets or Chinese markets. The hairy tofu is usually stored in a fridge.
Rinse hairy tofu in the water, then cut into pieces.
Preheat the pot, add vegetable oil to fry hairy tofu until golden brown on both sides. Remove from heat and set aside.
Add vegetable oil in the pot to fry the chopped green onion, ginger slices, chopped dried red chili. Fry until aromatic. Pour into broad bean paste. Fry until red oil comes out.
Add water into the pot. Add fried hairy tofu, add dark soy sauce, light soy sauce, white sugar, salt for seasoning. Bring to a boil over high heat. Cook until soup becomes sticky and almost runs out. Serve.
