Tips

1. Do not use fresh cucumber, use “old” cucumber for this soup because the fresh cucumber becomes too soft after simmering.

2. If you don’t want to add ginger slices for simmering, you can blanch pork ribs until cooked. It also helps to remove the blood taste of the soup.

Peel and remove the seed of the cucumber. Then cut into strips. Wash hyacinth bean, Radix Ophiopogonis, and honey dates.

Wash pork ribs and cut into small pieces.

Add water to a stew pot. Bring to a boil, then add all ingredients. Simmer over low heat for 3 hours. Add salt for seasoning before serving.
