Simple Hen Soup Hot Pot Base Recipe

For an easy and aromatic chicken hot pot, we used hen as the chicken meat. It is more nutritious. We started to boil the chicken in cold water to remove excess oil, blood, and bad taste. Then add water and all seasoning to stew the hen for 1 hour. The soup is so great that make our mouth water, even smell its fragrance.

Tips

1. Remove fat under the skin or you can remove the excess oil after stewing. Although this oil is greasy, it is aroma for stir-frying. Collect it for cooking if you desire.

2. Boil chicken before stewing to remove the blood and bad taste.

3. Stew for 1-2 hours to make soup flavorful. Although the chicken is tough, the soup is great for blanching every hot pot ingredients.

Remove the fat under the skin to avoid excess oil in the chicken soup.

Cut the chicken into pieces. Put into a skillet. Add cold water until cover chicken.

Heat until chicken turns white. Remove from heat and rinse with cold water. Set aside.

Add chicken pieces to the pot and add 5 bowls of water to the pot.

Wash star anise, bay leaves, and red date. Remove root of green onion, wash and cut into strips. Peel ginger, wash and cut into slices. Peel wax gourd and cut into 0.4 cm slices.

Add star anise, bay leaves, red dates, green onion, ginger slices to the pot. Then add wax gourd.

Bring to a boil. Switch to low heat and stew for 1 hour. Add goji, salt, sugar and mix well. Serve directly or as hot pot base.
