To make this simple but mushroom aroma soup, all we need to do is to prepare dried shiitake mushroom and a hen with simple seasoning-salt, sugar and cooking wine. The process is easy. Simply stew all ingredients until it’s done. The soup taste is depth with a strong chicken and mushroom flavor.

2. Dried shiitake mushrooms have more favor than a fresh one. It can better diffuse a sweet and fresh aroma in the soup.

Soak Goji in the water for 10 minutes, rinse and clean. Soak dried shiitake mushroom in warm water for 30 minutes, remove the stem. Peel, rinse and slice ginger into pieces.
Wash rice vermicelli. Remove the roots of coriander. Remove old leaves from Spinach, rapeseed flowers, wash and cut into strips. Peel and slice the white radish into pieces.
Cut chicken pieces into large pieces, wash and set aside.
Put chicken, red dates, shiitake mushroom, and ginger into the pot, pour into cooking wine and add water.
Bring to a boil over high heat. Turn to low heat and simmer for 1 hour. Add Goji.
Season with salt and sugar. When serve. bring to a boil and cook other food ingredients.
