Stir-fried Chinese Toon Sprouts Recipes

Ever early spring, it is the best time to satisfy your taste bud with Chinese Toon Sprouts. It is light taste and it as tender as fish fillets. When covered and fried with flour, the taste is almost the same as the fried fish fillets.

Kitchen Tips

1. Use fresh Chinese toon sprouts. These toon sprouts should be light purple and less than 12cm.

2. Do not marinate toon sprout. Adjust the salty favor in the paste mixture to control the taste. It should be light taste, so a little salt is enough.

Mix flour, cornstarch, baking powder, and salt in a bowl. Break into an egg, stir evenly and then add a little water. Stir until thicken and become a paste (For the best thickening, the paste mixture should flow like liquid. Control the water amount to prevent too thin or too sticky).

Add to water to a pot. Bring to a boil. Turn off heat and blanch Chinese toon sprouts for 5 seconds. Remove Chinese toon sprouts from heat and put it into a bowl. Cover and allow the remaining hot to heat for 10 minutes.

Uncover and gently squeeze to remove excess water.

Use chopsticks to pick up the toon sprouts and dip into the paste mixture. Then fry in the over medium heat. Fry individually to prevent overcooking.

After all toon sprouts cooked, fry all of them again over high heat. Serve.
