Stir-Fried Minced Chicken and Winter Bamboo Shoots
For golden brown inter baboo shoot and chicken, we minced chicken breast first and marinate with egg liquid and seasonings. Then fry and boil winter bamboo shoot. When it is done, pour into the chicken paste and stir fry until golden brown.

Tips
- When fry winter bamboo shoot, do not fry over 1 minute, or it may be overcooked.
- Add egg liquid, cornstarch into the chicken paste to make a crispy mouthfeel.
- Use high heat to stir-fry chicken paste for 3 minutes. It is the key to make the chicken paste and winter bamboo shoot golden brown.

Steps
5 minutes | Cut winter bamboo shoot into 5 cm long strips. Mince chicken breast and pork fat into pieces. Cut ham into small pieces. |
5 minutes | Beat egg into a bowl. Add salt, cornstarch, and mix well. Add minced chicken and pork. Stir into meat paste. |
5 minutes | Add 1/2 bowl lard into the pot. Preheat the pot and fry bamboo shoot for 1 minute. Remove from heat. Use hot water to rinse out excess oil. |
25 minutes | Use another pot, pour into chicken soup. Add fried bamboo shoot strips. Use small heat to cook for 20 minutes. Remove from heat. Pour into the chicken paste. |
8 minutes | Add lard into a pot. Preheat the oil and fry the chicken paste. Stir-fry for 3 minutes. Remove to a plate. |
5 minutes | Top with chopped ham and green onion. Serve. |
