Wash fresh shrimp, remove shell and sand vein. Use half of shrimps meat to make a paste-Use a knife to pat and mince into a paste. Set aside.
Wash fat pork, mince into small pieces. Set aside.
Add shrimp paste, minced pork into a bowl. Add chopped green onion and chicken powder, sugar and salt. Stir until mix well.
Add a little salt to the remaining shrimp and mix well. Marinate for 20 minutes.
Add wheat starch and starch into a bowl. Add a little salt, stir well. Gradually add hot water while stirring the starch mixture. Stir until all starch into a paste. Cover the lid and let sit for 5 minutes.
Use the starch mixture to make a dough. Add lard to the dough and knead until mix well. Divide into small doughs, then roll into dumpling skin. Use the dumpling skin to wrap pork mixture stuffing and 1 shrimp. Make them into shrimp dumplings. Steam for 5 minutes. Serve.
