Tips:

  1. How to clean sea cucumber? Place the dried sea cucumber in a thermos flask, fill with boiling water, cover tightly for 12 hours. Cut off the abdomen, remove the internal organs, wash and clean. Then soak in cold water for 12 hours (renew water twice in these 12 hours).
  2. Seafood contains much water. Blanching can remove excess water and get rid of the fishy smell. 
  3. Mixing egg liquid with warm water can shorten the steaming time. It makes the egg custard even and soft.

Remove the sand vein from the shrimps and wash until clean. Rinse and cut sea cucumber into small pieces. Wash and cut coriander into stripes.

Blanch shrimp, sea cucumber, scallop meat in the hot water, respectively. Rinse and drain.
