Chinese Tea Leaves Smoked Chicken Recipe

Tea Leaves Smoked Chicken is Aihui Cuisine. The chicken contains tea flavor but no bitter taste at all. It is the best childhood memory for many Chinese. When they are children, they hang out with friends and make it on the farmland. Buried the chicken and tea leaves in the ground and make a fire on the top. After the fire is off, dig out the tasty chicken and enjoy with friends.

Tips:

1. You can use tinfoil to cook seasonings to prevent sticking on the pot. And it is easy to clean after cooking as well.
 
2. If you like strong tea fragrance when chicken soaks tea fragrance, you can cook with small heat. Never use high heat or the tea leaves will burn.
 
3. Chicken breast side down when placing it to the pot, because breast meat is thick to cook and add flavor.

Remove giblets and cut off the feet. Wash and clean the chicken.

Add light soy sauce to the water and bring to a boil. Boil the chicken over low heat for 25 minutes.

Rinse the chicken with cold water and dry it with a towel. Pour over the barbeque sauce and dry it at a ventilated place. You can use an electronic fan to blow until dry.

Add oil and preheat the pot. Fry bay leaves, tea leaves, and brown sugar until you see the smoke.

Put a steaming rack (or iron rack) in the post. Place the chicken on the rack and cover with a lid. Turn off the heat to let the chicken soak the fragrance of the seasonings, for 30 minutes.

Remove chicken from the pot. Pour hot oil over the chicken. Serve.
