This sesame cake is crispy outside and tender insider. It is a perfect Chinese snack for dim sum, afternoon tea, or appetizer.
500g low-gluten flour
5g baking powder
25g bread improver
10g white sesame
1. Make sure to preheat the oil to about 150 degrees, in the way, it can effectively remove excess water and will not burn the dough.
2. Mix white sesame and black sesame to have a different flavor.
Mix low-gluten flour and baking powder. Then pour into a circle on the clean work surface. Add sugar, yeast, bread improver, and water in the middle area. Stir until sugar melt.
Stir in the flour and knead into a dough.
Knead until the dough become smooth and elastic. Use a plastic wrap to cover the dough and let it rest for 30 minutes.
Divide the dough into small doughs, about 30g each.
Coat the dough with white sesame.
Place the dough into a steamer. Let it rest for 30 minutes. Use high heat to steam until cooked. Let it cool to room temperature. Add oil into a pot, fry the dough until golden brown. Serve.
