1. Do not use fresh cucumber, use “old” cucumber for this soup because the fresh cucumber becomes too soft after simmering.
2. If you don’t want to add ginger slices for simmering, you can blanch pork ribs until cooked. It also helps to remove the blood taste of the soup.

Uh, that is NOT a cucumber…. What is the name of the “cucumber” because that is something else….
