Fried Glutinous Rice Cake Recipe
Fried Glutinous Rice Cake (ZiBa, 糍粑) is a dessert or snack in many provinces, including Guangxi, Yunnan, and Sichuan Province. The taste is really special that not everyone loves it, but for Chinese culture lovers, Ziba is a must-try snack.
250g glutinous rice
1. You can use any vegetable oil
to fry rice cakes, but do not lard oil, because it will be too greasy if you use any animal oil.
2. If you like spicy flavor, you can fry Sichuan pepper
before frying rice cakes. In this way, the taste is more special and aromatic.
Wash glutinous rice. Add water until cover glutinous rice. Soak in the water overnight.
Use a rice cooker to cook glutinous rice (Or you can cook it like normal rice). When it is still hot, crush into a glutinous rice paste.
Divide the paste and make them into small rice round cakes.
Beat an egg into a bowl and stir into egg liquid.
Add vegetable oil into a pot. Preheat the oil. Coat rice round cakes with egg liquid. Fry over low heat until expand and golden brown on both sides. Sprinkle a little salt during frying.
