Nourishing Softshell Turtles Hot Pot Recipe

Softshell turtles & chicken soup are the best for dietary therapy in Chinese medicine. To make meaty turtle soup, we blanched softshell turtle in 80-degree water to keep fresh and remove bad taste. And then, fried and added fine-tuned herbal ingredients that make soup has a strong meaty flavor. You would also feel a light sweet taste as the delicate finishing touch.

Tips

1. Softshell turtle’s gallbladder is a nutritional supplement for our body. Chinese medicine believes it can effectively improve our body’s immune system.

2. The gallbladder is a little bit bitter. But its taste can be covered by adding more white pepper powder and beer. Or discard it if you desire.

3. Blanch the meat in 80-degree water to remove bad taste, keep the nutrition and prevent overcooked. 100 degree boiling water enables its nutrition to dissolve into the soup.

Cut off the head of softshell turtles. Remove blood and separate shell and body.

Remove and discard the internal organs of the softshell turtles. Keep the gallbladder which is in the middle of the liver. Set aside.

Rinse and remove the blood. Put softshell turtle into 80-degree water. Blanch for 3 minutes to remove bad smell and taste.

Remove from hot water and tear off the black film which is on softshell turtle shell and its body. Then cut into pieces, wash, set aside.

Wash and chop the chicken into pieces. Wash and cut the scallion into strips. Cut ginger into slices. Set aside.

Add oil to the pot and stir-fry scallion and ginger slices until fragrant. Then add softshell turtle and chicken pieces to stir-fry until medium-well.

Add beer, soup, Codonopsis pilosula (Dangshen) and stir well.

Add turtle’s gallbladder into the pot. Mix well. After that, add salt, sugar, white pepper powder, light soy sauce to stew for 60 minutes.

After stewing, top with Goji and red dates. Stir well and stew for another 10 minutes. Serve hot.
