Chinese Hat-Shape Pancake Recipe

    Kitchen Tips

    1. Do not make the dough too soft or too hard.  It should be a little hard enough to shape.

    2. To make it in multiple layer shapes, you can elongate the dough when placing it into circles.

    Spread 500 grams of flour on a cutting board. Add 250 ml of warm water, 5g salt. Make to a dough. Set aside for 15 minutes.

    Mix 50 grams flour, 75 ml vegetable oil, 5g salt, and chili powder. Fully mix well and knead to a pastry.

    Make the dough into a strip and cut into small doughs. Use a rolling pin to oil doughs into skin doughs. Evenly put the pastry on the skin doughs.

    Use hands to fold the thin doughs. Then hold two ends and gently extend to make it a little bit longer.

    Use an end of dough as a center, place the dough into circles. Let it stand for 10 minutes until slightly set.

    Turn over the dough, gently press and roll into a round pancake.

    Add oil and preheat the pot. Add round pancake. Brush a little vegetable oil on the face-up side. Fry over low heat while using hand to rotate the round pancake until golden brown. Serve.
