10 Sichuan peppercorns

Tips

1. To make the most simple, you can use sesame paste as the dipping sauce of hot pot.

2. No need to add too much salt, because sesame paste, peanut butter, and peppercorns already have some flavor.

3. You can purchase Sichuan peppercorn oil directly from supermarkets. But the freshly made Sichuan peppercorn always taste better than a package one.

In a bowl, add 2 tablespoons sesame paste. Stir in water until mix well.

Add peanut butter, oyster sauce, salt, sugar and sesame oil to the sesame paste.

Add 2 tablespoons oil to wok, fry Sichuan peppercorns over low heat until fragrant.  Discard fried Sichuan peppercorns. Keep the oil.

Add 1 tablespoon peppercorns oil to sesame paste and sprinkle with chopped green onion.

For salty flavor, add leeks and fermented bean curd.
