- leftover rice
- 1 eggs
- 2 tablespoons dark soy sauce
- cooking wine
- oyster sauce
When cooking Fried rice, use leftover rice instead of freshly cooked rice. Because leftover rice contains less water, it is the key point to maintain the rice shape when cooking.
Use a big bowl. Add a large bowl of rice, add 2 tablespoons of dark soy sauce, 1 teaspoon of cooking wine, sugar, and oil. Stir well. Add more soy sauce if you desire (you can adjust the amount based on the rice color)
Beat eggs in another bowl and set aside.
Then add more oil to the pot. Add sliced onion and stir-fry until fragrant.
Add the eggs into the pot, mix well. Try the taste, and add seasoning if you like.
