When cooking Fried rice, use leftover rice instead of freshly cooked rice. Because leftover rice contains less water, it is the key point to maintain the rice shape when cooking.

Use a big bowl. Add a large bowl of rice, add 2 tablespoons of dark soy sauce, 1 teaspoon of cooking wine, sugar, and oil. Stir well. Add more soy sauce if you desire (you can adjust the amount based on the rice color)
